this time of the year they usually tarantulas go dormant. which means they don't eat until the spring.

As it is with Snakes,,, they do, as answer number one states attain a dormancy. Certainly they still need to be monitored, and have all essential needs met in that time.
You don't mention, especially with regard to crickets, if your "Rose" eats live or dead. If it might accept dead, especially with regard to crickets, I suggest you introduce a meal into it's enclosure on occasion, watch it, and unless there is a spoilage issue, leave it accessible for a reasonable period of time.
Currently I have a Corn Snake exhibiting the same issue, and although still active, he will not eat. Live food certainly would be more enticing, but that too will die eventually, even if not "taken"
Just an aside, in case you're worried about any non interest in food, shown by your "Rose" Again, just an analogy, but relevant.
I once had an albino RED rat snake, who traveled the country with me. At a point of reaching a "Job" I left the top of the enclosure ajar and RED got out. That was in December of that year. I tore my vehicle nearly apart looking, to no avail. In April the next year I was finishing up the job I began,and had old lumber to haul away. One morning, a Sunny day I found RED curled, on top of a pile of refuse Lumber, in the back of my SUV. He was fine, and did eat within the next few hours.
One final note, as it regards crickets versus pinkies. If they have to be "live" and Rose doesn't "take" them, the decay factor won'y be as much an issue as with Pinkies left to decompose, although unlike some Snakes, a Tarant. may not take carrion (Road kill)
The FACT is that Predators involve in a "Hunt" as much as they do in a Meal.

Perhaps it has develped a dietary preference. There is a wide gulf between a mouse and crickets. One more mouse would tell.
