Mostly the difference between the two is the person that runs each organization. Police are generally run by Police Chiefs that are appointed and Sheriff agencies are run by a Sheriffs that are elected.
Beyond that, the differences between the two are muddy. Police generally work for a city and called Officers and Sheriff agencies patrol Counties and are called deputies. Sheriff agencies generally, but not always, run jails, provide court protection, and serve civil actions.
Some states, like NC, the Sheriff has county wide jurisdiction and city Police only have general police jurisdiction within their city. Other states, like OR, all peace officers have State wide general police jurisdiction.
There is many agencies with attributes of both police and Sheriff agencies like King CO Sheriff, WA or Las Vegas Metro, NV.

Sheriff's dept works the whole county, including the cities in that county. The police works the city in which they are employed, the citizens in the city has the right to request a deputy to work a complaint. The sheriff has the full responsibility of the court house where city officer don't, the bailiff is always a deputy or person appointed by the judge

They are both law enforcement officers. Police can refer to within the city limits and the Sheriff is generally all the county. However there is also State Police so "Police" is not always a term used for the city.

The sheriffs dept. is the chief law enforcement officer for the Courts.
The police is the governmental department charged with the regulation and control of the affairs of a community, now chiefly the department established to maintain order, enforce the law, and prevent and detect crime.

Police jurisdiction is over the City and Sheriff Depart. is over the county... eventhough they have the right to enforce city laws but the police do not have the right to enforce laws beyond the city limits.

here we have both the county police and the county sheriffs department, we also have several city police depts.
the sheriff is responsible for judicial enforcement, they are part of the court system, i.e. prisoner transports, court house security, protection of judges and jurors, serving warrants, etc.
the police are responsible for day to day law enforcement, patrol, investigation, and all other aspects of law enforcement
the city police handle patrol and traffic in conjunction with the county police and sheriffs department within their city limits

police just take care of things in their particular city,where the Sheriff Dept,covers the whole county area. the State police,they can go anywhere,in their state when needed.
