Condensed milk could be a generic term for milk that has had 60% of its water removed by evaporation. With sweetened condensed milk, great quantities of sugar were added first, accounting for 40% to 45% of the total volume before evaporation. Once all that water is removed, it is a very sticky and very sweet mixture.
Unsweetened condensed milk, however, is simply called evaporated milk, at least in this country, and comes in whole, lowfat and skim versions.

Condensed milk

Evaporated milk was popular before refrigeration as a substitute for perishable fresh milk, because it could be reconstituted by adding water. In present times, household use is most often for desserts and baking. When mixed with an equal amount of water, it can be substituted for fresh milk in recipes.

of its water. It's very thick, about like pudding.
it is great for is used for making desserts
Evaporated milk doesn't have any sugar added, it's just had the water taken out. It's much thinner than SCM, more like thick milk.
it can be used in recpies that call for milk..

condensed milk is sweetened and evaporated is not...so if the recipe calls for condensed it is best to use that or the taste will be greatly affected..good luck...Fudge yuumm ooo
