A couple of my family members are lactose intolerant and I am looking for any dessert suggestions that don't involve making a pie or squares. Jello just doesn't seem festive enough...

NON DIARY CHOCOLATE CAKE
3 cups flour
2 cups sugar
6 tablespoons cocoa
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons vinegar
3/4 cup canola oil (almost any kind of cooking oil will do)
2 teaspoons vanilla
2 cups water

Sift first 5 ingredients together in an ungreased 9x13 pan.
Make 3 wells and in each hole place the next 3 ingredients.
Pour 2 cups of water over top mix with a fork or wire wisk.
Bake@ 350 for 30-35 minutes.


FLOURLESS NON DAIRY ORANGE CAKE
2 medium-size, thin-skinned oranges, preferably seedless
1 1/2 cups ground almonds
6 eggs
1 cup sugar
1/2 teaspoons baking powder

Scrub the fruit well. Place in a pot, cover with water, bring to a boil, reduce heat to simmer, cover and simmer for 2 hours, checking every once in a while to make sure the water hasn’t boiled off too much. Drain and when cool enough to handle, cut the fruit in half carefully, and remove all of the seeds (otherwise the cake will be bitter).

Preheat the oven to 350 degrees F. Grease and flour, or line with parchment, a 9-1/2- or 10-inch springform pan. Use matzo meal instead of flour if you are baking for Passover.

Put the fruit, skin and all, in a food processor fitted with the steel blade and puree. Measure out 1-1/4 cups.

Beat the eggs with the sugar and baking powder at medium-high speed until thick and lemon-colored. Add the ground almonds and mix well. Mix in the pulped orange at low speed, in two or three additions, beating for 20 seconds after each addition. Pour into the prepared pan.

Bake for 1 hour, until firm and a knife comes out clean. If the top begins to get too brown halfway through, cover loosely with foil.

Note: If making for Passover, if you want to eliminate the baking powder, beat the egg whites separately, and fold into the batter at the end.

If you're artistic you could make sugar cookies with Christmas designs painted on them. Watered down food coloring makes a good water color-like paint. Apple crisp is another choice, although it is similar to pie.

Yield: 6 servings

1 c C&H Golden Brown Sugar
1/2 c All-purpose flour
1/2 ts Nutmeg
1/2 ts Cinnamon
1/4 ts Salt
1/4 c Butter or margarine
5 c Sliced tart apples
-- (5 to 6 apples)

Mix sugar, flour, spices, and salt. Cut in butter until mixture is
crumbly. Spread apples in bottom of buttered 8- or 9-inch square baking
pan. Sprinkle crumbly mixture over fruit; pat lightly with fingers. Bake
uncovered at 350 degrees for 40 to 45 minutes, or until apples are tender.
Serve warm with cream or ice cream. Makes 6 to 8 servings.
