Hiya, as the title says, im a veggie (and yes I do eat more than lettuce and carrots and no im not a stick) and a good cook but have had a complete brain block this year. Normally I do filo pastries stuffed with goats cheese and other veg, or various other bits (not nut roast as I hate the stuff!) Just wondering if anyone else has some interesting recipe ideas for a veggie xmas lunch main? Would be great to hear some! Thanks in advance and Merry Xmas!

Vegetarian Pot Pie

This pot pie recipe is better than the TV dinner version for two reasons: it's vegetarian and it's prepared and baked, rather than frozen and microwaved. It's also quick and flexible, so give it a try.

Yield 6 servings
Time 1 hour
Tools large, heavy saucepan
wooden spoon
2-quart baking casserole
rolling pin

Ingredients 1 T butter
6 c assorted vegetables, thinly sliced or diced. Some ideas:
- bell peppers
- carrots
- celery
- corn
- green beans
- leeks
- onions
- peas
- potatoes
- spinach
- tomatoes
- zucchini
1 clove garlic, minced
¼ c flour
3 c warm veggie stock and/or milk
½ t thyme
2 T fresh parsley, minced
1 t salt or soy sauce
black pepper
1 recipe pie crust or vegan pie crust dough

Directions Melt the butter in the saucepan, add the vegetables and sauté over medium heat, stirring frequently, for 5 minutes. Add garlic and continue sautéing for another 5 minutes.
Sprinkle flour on top and continue cooking, stirring constantly, for 2 minutes.

Gradually add the warm liquid, stirring constantly, until sauce thickens.

Add thyme and parsley and continue cooking until all of the vegetables are tender, about 10 minutes. Stir in salt and pepper, then transfer vegetables to the baking casserole.

Preheat oven to 400.

Make the pie crust dough, then roll it into a circle slightly larger than the casserole. Lay on top of the vegetables, without sealing the edges.

Place in oven and bake until filling is bubbling and crust is golden brown, 20-30 minutes.

Notes This recipe is very flexible. You can use just one or two vegetables, or a whole assortment. You can make it chunkier by increasing the amount of vegetables, or saucier by increasing the amount of liquid. Try it my way, and then experiment to discover your own favorite. :-)

Vegetarian Christmas Roast

I found this while seaching the net one day, and thought it sounded good for all our vegetarian friends.

1 loaf 55 min 10 min prep

INGREDIENTS

For the Roast

1 large onion, thinly sliced
8 ounces dark brown lentils
4 ounces brazil nuts, shelled and finely chopped
4 ounces walnuts, shelled and finely chopped
4 ounces hazelnuts, shelled and finely chopped
2 tablespoons chopped thyme
2 tablespoons chopped parsley
1 teaspoon chopped rosemary
4 tablespoons dry red wine
salt & fresh ground pepper
1 tablespoon chopped savory
1 bay leaf

For the stuffing

4 ounces whole-wheat breadcrumbs
6 sage leaves, chopped
5 tablespoons dry red wine
4 tablespoons olive oil
1 onion, sliced and chopped
salt & fresh ground pepper

For the Topping

3 ounces whole-wheat breadcrumbs
4 tablespoons olive oil
2 tablespoons sesame seeds

DIRECTIONS

Put the lentils, sliced onion and bayleaf in a pan of water, bring to the boil and continue boiling until they are well softened.
Remove the bayleaf then drain and mash the onion and lentils.
Add the nuts to the lentil puree then stir in the herbs, wine and seasoning.
For the stuffing gently cook the onion in the oil until the onions soften.
Remove the pan from the heat and mix in the breadcrumbs, seasoning, sage and red wine.
Take a flat ovenproof dish and spread half the lentil and nut mixture over the base.
spread the stuffing mixture over it then cover with the remaining lentil mixture.
Shape the whole to resemble an oblong loaf with the stuffing completely inside.
Mix together the topping mixture of breadcrumbs, oil and sesame seeds then press the mixture over the roast.
Bake in pre-heated oven at 400f for about 45 minutes or until the topping mixture is brown and crispy.

I'm a vegitarian as well..and im having a Quorn Roast with all the veggies yummy oh and ad that extra bit of flavour have onion sauce that colmans makes in the purple packet.or pepper sauc..

I'm afraid I just have everything minus the meat- it's the only roast dinner I get in the year and I'm so excited! Will be looking to see other's ideas though. Happy christmas

I'm veggie too, and just do a turkey crimbo dinner minus the big bird. You hardly starve with all the yummy roasted taters, honey parsnips, stuffing, mandatory brussel sprouts and what-not. Mmmm.

Well this year for my Christmas Dinner I had a cheese sandwich and it was great, I was damned hungry, had nothing to eat for hours and the sarnie was the quickest and easiest, home baked bread helped it along but whatever, my festive repast took some beating.

vegetarian christmas dinner (brilliant) I for one would never consider eating a carnivorous turkey but since every turkey ive ever purchased was fed on corn and growth hormones I think youll be alright . please do whatch out for those damned meat eating yams though you cant really tell by looking . Merry Christmas
