if ya have to start something with water to boil-always start with cold(it doesnt' have to clarify-like hot would)using hot to start actually takes longer to bring to a boil-next add just a pinch of salt-that will btb faster-and when it's 'rolling(bubbles) from the bottom -you have what you need--good luck-merry christmas
