The ESP button is an update from VW's older traction control button the ASR, but its still the same thing. It prevents the car from losing traction so none of your tires will burn out. Its good to have in the rain, but if you want the car to burn out at a light, press the button and it turns off traction control. Every time you turn the car off and then on, traction control will automatically come back on and you just press the button to turn it off again. The key is actually 2 parts, you can purchase just the remote or just the key portion. Together is runs about $300. The dealership also offers a vale key which is about $70, but is only a key and does not have the remote and it will not unlock the trunk. The dealership charges a lot for the book you should try eBay first.

ESP is part of the traction control system which is part of the Anti Lock Brake system what it does is uses the wheel sensors to determine if there is any slippage or loss of traction it will then activate the brakes on that particular wheel to slow it down to help regain traction, when it activates you may hear or feel a slight rumble as the brakes are actuating.
A spare key is purchased at a VW Dealer and may need to be programmed to the car costs will vary, the Jetta owners manual is also purchased at a VW dealer.

If it has an ASR button in place of the ESP button, that means it just has the less-complicated traction control system and it has no electronic-stability program. My Rabbit only has ASR and it gets around just find in bad weather, if that's what your concern is. The ESP is probably just a waste of money.
