I would say that the whole "rain check" phrase has negative connotations. I would just say "I really want to go out but I can't, can we set it up for another day?"

I'd tell him that you would really enjoy going out but have made previous commitments for that particular date but would be pleased if he would ask for a different date...even offer a possible substitute date you have open if really attracted and interested...

Can't you just say, I'm busy Friday night, but I'd love to go some other time! How about the next Friday?

Sure--apologize and say I would like to go out another time--isn't that easy. If he truly would like a date--he'll do it. If not---too bad for him.
