Pizza dough?

To make pizza you have to do two things: Heat the oven and make the dough. We'll begin with the dough; making it the traditional way will take about 3 hours, most of which is rising time. If you instead use a bread machine it will take about 90 minutes. Neapolitans, the masters of pizza baking, say the dough should be made from brewer's yeast, flour, salt, and water. Many people also add a little olive oil.

* 5 cups (1/2 kg) stone-milled flour (bread flour will work perfectly)
* 1 cup (250 ml) warm water
* 1 ounce (30 g) brewer's yeast or 2 teaspoons active dry yeast, dissolved in the water
* 1 tablespoon olive oil
* A pinch of salt

If you are working by hand, make a mound of the flour, scoop a well in the middle, and add the salt and olive oil. Next, mix in the water-yeast mixture, and knead until the dough is smooth and elastic, and comes easily away from the work surface -- about 10 minutes, knead energetically. Shape the dough into a ball, put it into a lightly oiled bowl, cover it, and put it into a warm place to rise for 2 hours or until doubled in volume. Punch the dough down, knead it briefly, and divide it into 4 balls. Put them on a floured surface, cover them, and let them rise for an hour.

Need more dough? For a dozen dough balls you'll need 4 1/2 pounds (2 k) of flour, a quart (1 liter) of water, more salt, 1/4 cup olive oil, and 8 teaspoons yeast.

INGREDIENTS
3/4 cup water (70 to 80 degrees F)
2 tablespoons dried minced onion
1 tablespoon nonfat dry milk powder
1 tablespoon sugar
1 tablespoon butter or margarine, softened
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
2 cups bread flour
2 teaspoons active dry yeast
1/3 cup chopped pepperoni
1/4 cup chopped canned mushrooms
1/4 cup shredded mozzarella cheese
2 teaspoons grated Parmesan cheese
DIRECTIONS
1. In bread machine pan, place the first 10 ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

2. Just before the final kneading (your machine may audibly signal this), add the pepperoni, mushrooms and cheeses.

ITALIAN PIZZA BREAD

1 pkg. dry yeast
1/4 c. warm water
1 c. pizza sauce
1/4 tsp. baking soda
1 tbsp. dry minced onion
2 tbsp. butter
1/2 c. shredded sharp Cheddar cheese
1 tsp. salt
1 tsp. sugar
1 egg, beaten
1 tsp. Italian seasoning mix
2 3/4 c. bread flour

Dissolve yeast in warm water. In saucepan warm pizza sauce and baking soda. Then add onion, cheese, butter, salt, sugar and seasoning mix. Heat and stir until cheese melts. Cool to lukewarm. Add beaten egg and dissolved yeast. Stir in half the flour and mix well. Then stir in remaining flour.

Turn onto floured board and knead 5 minutes. Place in 9x5 inch greased bread pan. Brush top with melted butter (sprinkle with sesame seeds). Cover and let rise in a warm place 30 to 45 minutes. Bake at 375 degrees for 30 to 35 minutes. Remove from pan, brush with butter. (If necessary cover with foil the last 10 minutes of baking to avoid overbrowning.)

BEST PIZZA BREAD

-1 loaf garlic bread
-1/2 lb. ground chuck
-1/2 lb. Bob Evans sausage
-1 med. onion
-1/2 tsp. oregano
-1 can Chef Boyardee pizza sauce
-1 can mushrooms, drained
-Provolone cheese slices
-Pepperoni slices
-Shredded Mozzarella cheese

Method:-

1) Thaw garlic bread. Split in half.
2) Brown meats, onion and oregano.
3) Add 1 can Chef Boyardee pizza sauce.
4) Simmer 10 minutes.
5) Layer meat mixture with mushrooms, cheeses and pepperoni. 6) Bake on foil lined cookie sheet at 350 degrees for 15 minutes.

150ml warm water
1 sachet (7gm) dried yeast
half teaspoon salt
1 teaspoon sugar
quarter teaspoon oregano
1half cups flour
Place warm water in a bowl. Add yeast, sugar and oregano. Stir to dissolve yeast.Add 1 cup of flour and blend all ingredients with spoon or mixer until smooth. Beat in remaining flour.Cover with a warm cloth and allow to rest for 10 minutes.Brush Pizza trays with oil.Spread dough evenly wiht oiled fingers over one or two pizza trays, depending on thickness of dough desired.

BBQ sauce (you can substitute tomato sauce if you want)

Pineapple

SPAM (if you are too good for SPAM, you can use whatever other meat you like. I like SPAM)

Squeeze some "Smokey BBQ sauce" on your bread. I prefer a zigzag method to get a relatively even spread without having an overkill of BBQ sauce. You can also use tomato sauce here, but from my experimentation, BBQ sauce is best.
