Im making this for a Christmas lunch as a starter. Have no idea what to use a a sauce. What to roll and cut the creppes for the base for the prawns. Prawns arranged ontop and then with a sauce sprinkled aroung. Please help.

You may mix some finely chopped cucumber pickle & onion + mayo for deep fried prawns (or store bought tar tar sauce). And put a spoonful of carvier + some chopped fresh dill on the salmon cream cheese crepes. If you do not have carvier, you can whip some sour cream or fresh cream and mix some chopped dill (or parsley) to garnish your salmon crepe. Serve with a wedge of lemon.

It is not clear to me whether the salmon and cream cheese are part of the crepe batter or are the crepe filling. If they are the filling, no sauce is needed. Also, crepes are usually folded rather than cut.

However, a nice sauce would be of either parsley or cilantro leaves blended together with green onion or shallot and olive oil with a squeeze of lemon or lime mixed in. Add salt and pepper to taste.

Tomato-Mushroom Sauce
In small nonstick saucepan over medium-high heat, heat 1/2 tsp oil. Add mushrooms. Cook until softened, 4 minutes, stirring once. Add tomato sauce. Simmer until thickened, about 5 minutes. Remover from heat. Cover.

Lemon-Garlic Sauce
In a small pot of boiling water, cook the garlic for 2 minutes to blanch. Finely chop the garlic and transfer it to a small bowl along with the lemon juice, 3 tsp of the oil, and the parsley. Set the sauce aside.

salmon creamcheese crepes do not need a sauce.

deep fried prawns. hoisen sauce. the best sauce for deep froed prawns.
