Sweet Potato Balls
A terrific side dish or holiday appetizer...little portable, handheld sweet potato casseroles! The cooking time includes one hour for chilling time (it may take longer).
3 lbs sweet potatoes, cooked and drained
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 whole egg
1/2 cup miniature marshmallows
1/2 cup gingersnap crumbs
1. Mash the sweet potatoes while they are still hot and add the butter, salt and spices.
2. Add the egg and continue to whip until thoroughly combined.
3. Chill until firm and then form into golf ball sized piece, stuffing 2 to 3 marshmallows in center of each ball.
4. Roll in the ginger snap crumbs and place on a non-stick or lightly greased baking sheet.
5. Bake at 400°F for 10 to 15 minutes.
*** Suggestion: If you don't like ginger snap crumbs, I would suggest brown sugar and leave out the marshmallows in the center of each ball.

I always make the same two sides....both are great & inexpensive.
"Sweet Potatoes & Yummy Baked Beans"
(Not sure how many you are cooking for, so you can figure that 1/2 can will feed one person...add as needed)
*Sweet Potatoes'
1 12-16 oz can
smash/mash in a bowl (don't use mix master)
add cinnamon and brown sugar (to taste)
bake at 300 for about 20 minutes
top w/small marshmellow and place back into oven until they rise and become lightly golden in color.
(place marshmellows in the middle, because they spread)
"Baked Beans to Die For"
1 12-16 oz Pork n' Beans
Dark Karo Syrup
Barbecue Sauce
Brown Sugar
Bacon
Onion
Slice up bacon and onion
Saute until bacon and onion appear soft (strain off oil)
Strain Pork n' Beans
Pour beans, bacon and onion together
Add 1 cup Dk. Karo
Add 1/2 cup Barbecue
Add 1.5 cup brown sugar
Cook slow for 15 minutes/turn off
Turn on for 15 minutes/turn off
The more you repeat this off/on cooking, the thicker the beans become....very, very good & work great w/ham....

Au gratin potatoes (any of the boxed mixes are good)

Green Bean Bake/Casserole is a good choice, and cheap too.....Or how about Smashed Sweet Potatoes? Both are yummy!

Green beans with slivered almonds.
Scalloped potatoes. There are some great Betty Crocker packages out that make fantastic scalloped potatoes. Cheap as all you need is the package and water.

Last year we had ham, side dishes were
white rice - boil with water
gravy - packet mix with water
roast potatoes - roast in oven with water at the bottom of the tin
peas - boiled in salt water with a sprig of mint
carrots - boiled in water with a spoon of sugar
none of these are particularly expensive

In the superstore, fruits are usually picked out far too soon. Some are rocks, many are bitter. Some of the fruit and vegetables are right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
