I would spray the pan with pam and add olive oil. Have the pan hot and you will know the perfect temperature if you hold you hand 4 inches over the pan and you feel the heat, add the hash browns.

Be sure to make sure the pan is hot and if you check just the edge and see that they are brown enough. Flip them over, and repeat the process. Meaning making sure the other side is completely brown.

Remove from pan, and serve.

Cook them in a bit of bacon grease or butter. Keep the heat medium to brown well but not fast. Scrape the pan with a flat spatula frequently. It thyey srart to burn, I turn the spatula upsidee down and scrape the pan before it sticks too much. The potatos are nicely browned then
