Just been shopping. What makes the difference between single and double cream? I know double whips and starts thicker, but why?

Also, why does a question have to have at least 10 characters?

i would think that double cream would be twice the price

It's all to do with the fat content and how it's processed after leaving the cow. The differences are as you described - thicker and easier to whip etc. - I've often wondered this - especially at 0750 on a Saturday morning.

I don't know about the 10 character bit - I've seen a question posted which just said "Why?" - so it's possible to post under 10 characters.

Its to do with fat content. Double cream has more fat. Single has much less and whipping cream has just enough for it to be able to hold itself when whipped.
