Butternut Squash Soufflé
2 cups cooked, mashed butternut squash
3 tablespoons butter, softened
1 cup sugar
1/3 cup milk
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 eggs
1 teaspoon vanilla extract
Heat the oven to 325 degrees. Grease a 1 1/2-quart casserole dish. Combine all the ingredients in a large bowl and beat with an electric mixer until well combined. Pour the mixture into the casserole dish and bake for 75 minutes or until set. Serves 6 to 8.

Chicken Stew with Butternut Squash (Serves 4)
1 tbs vegetable oil
1 1/4 pounds skinless, boneless chicken breasts, cut into 1-inch chunks
3 tbs flour
1 onion, cut into 1/2-inch chunks
4 cloves garlic, slivered
1 large butternut squash (2 1/2 pounds), peeled and cut into 1-inch chunks
2 cups canned no-salt added chopped tomatoes
1 cup chicken broth
1/2 cup apple juice
2 tbs no-salt added tomato paste
1/2 tsp each dried sage and salt
1/4 tsp pepper
1. In a large nonstick Dutch oven or flameproof casserole, heat 1 1/2 tsp of oil over moderate heat. Dredge the chicken in the flour, shaking off the excess. Add half of the chicken to the pan and saute for 3 minutes or until lightly browned on both side. Transfer the chicken to a plate, Repeat with the remaining chicken and 1 1/2 tsp oil.
2. Add the onion and garlic to the pan and saute for 7 minutes or until the onion is soft. Add the squash, stirring to coat. Add the chopped tomatoes, broth, apple juice, tomato paste, sage, salt, and pepper, and bring to a boil. Reduce to a simmer, cover, and cook for 7 minutes.
3. Return the chicken to the pan, bring to a simmer, cover, and cook for 10 minutes or until chicken is cooked through and the squash is tender.

Halve the squash, remove seeds.
Roast in a hot oven (375) until fork tender.
Remove from oven, use a tablespoon to remove meat.
Place meat in mixing bowl, add 1/2 stick butter, 2 oz.
half and half, 2 oz real maple syrup, and a dash of salt.
Use hand mixer to blend until smooth like whipped potatoes

put it in a roasting tin, put a cup or two of water in the base.
Roast the wole thing until the butternut is soft in the middle (stab with a fork)
Take out, allow to cool - then peel
take out seeds
mash the butternut with butter
or serve chopped into blocks

Make into ravioli, pan fry with butter/olive oil and fresh sage leaves and pine nuts - sprinkle with ParmesanoReggiano cheese - enjoy!!!!!!!!!!!
