humans can go without water as long as they want to. this requires very high concentration and meditation. A man in India I think has been living only on sunlight since a long time. Well, its sunlight and water.

A human body can survive 8-14 days without water depending on the person and how fast sweat, urine, and tears are leaving the body and up to 4 weeks without food depending on conditions like weight, temperature and exertion.

Jess is basically right, although it depends a great deal on the person's hydration and nutritional status at the beginning of the fast. I've taken care of numerous hospice patients who stop eating and drinking; they typically last 3-5 days. Dying from this "terminal dehydration" is a great way to go, incidentally.
