That kind of depends on what I am shooting. If the shoot is something really important I'll shoot RAW so that I can adjust white balance and exposure later if necessary. Otherwise I am likely to shoot straight JPEG.

Normally the RAW file itself is perserved and the edits are saved in some other format. As mentioned above, the RAW file contains all of the data the sensor captured. The JPEG format is regarded as a "loosey" format in that it discards the some of the data.

RAW image format has not been processed in any way -- no white balancing, no color saturation adjustments, no contrast stretching. Also RAW format typically has more brightness information -- 12-14 bits vs. 8-bits for JPEG. Most professional photographers prefer this format because it allows much better control over the final images.

Be aware though that there is not a single RAW format -- each mfg has their own proprietary RAW format, and you usually need a plug-in from your camera mfg for whatever photo package you're using (Photoshop, etc.).

I dont because I dont have the need. Each camera has its own raw format and editing is slightly more complex than using photoshop. If you have a need for further processing and if you will be printing a huge picture (i.e. advertisements), your client may require RAW format. But for everyday family use, JPEG is more than adequate.
