Am I saying the following sentences correctly in Spanish? If not, could you please correct me? Thank you!
"__name__ said that she needs to know"--->"__nombre__ dijo que ella necesita saber."
"If that is true/the truth then....": "Si eso es cierto/verdad entonces..."
"I don't care what you think..." "No me importa qué piensas."
Also, how do you say "you are mean." I know that "no simpatíco"-means not nice. Would mean be "malo" even though that means evil/bad?

"Correct Way of saying it"
Nombre dijo que necesita saber si es cierto, entonces, no me importa lo que pienses
Note: You don't put an accent in que because in this sentence, que is use as relative adjective. you only accent que for asking questions. And it's not "no me importa que piensas" because this way is showing "present tense" and in your case you need to use "present subjunctive tense"
Regarding "you are mean", you can say eres malo, that's fine! people won't think it as evil unless you say in a different context.

1. i think this is correct, you can drop "ella" and it will sounds more flowing.
2. I think this is also correct, but I am certain that if you drop "eso" and "entonces" so it reads "Si es verdad,..." that will be correct and will have the same meaning.
3. correct, maybe put "tu" before piensas to add emphasis

Very good! In the 3rd sentence, I'd write "No me importa lo que piensas". If you write it without "lo", it needs following on, like "I don't care that you think I'm crazy,"
Mean, in the sense of parsimonious/tight, is tacaño (I think).
PS As already indicated, no tilde on the "e" of que in this sentence.

They are correct. You are mean - Tu eres malo, tu eres malvado, tu eres perverso. In Spanish are a lot of words to define mean.

- "(name) said that she needs to know". mmmhh, tricky. I assume that (name) and "she" do not refer to same person, if so , you should omit "ella", but anyway;
* Paul said that she needs to know ; Paul dijo que ella (tiene que/necesita) saberlo.
* Paul said that she needs to know who is coming" Paul dijo que ella necesita saber quien viene.
- "I don't care what you think" ; No me importa lo que pienses (or creas)
You need to put the verb in subjunctive mode (pienses, creas).
Also, you need to say "lo", the object. Otherwise, you're saying "I don't care you think".
...lo que digas; what you say
...lo que hagas; what you do
etc.
