I made some no bake cookies that contain chocolate chips, butter, marshmellows, and nuts. I did melt the butter and chips over a double boiler and then after mixing all the ingrediants I allowed it to harden in the frig. We are taking them to Indy tomorrow and that will be a four hour drive. I was hoping not to take them in a cooler to not take up more room in the trunk. Will they go bad? Could they make people sick if they aren't refrigerated?

Nope. It'll be fine.

Case in point: Rice Krispies Treat consist of butter, marshmallows, rice krispies. The butter is melted, but the things aren't baked. They're just left alone to set and cut up. No one I know stores them in the fridge.

As long as there are no meats or eggs or straight dairy products (milk, cheese, yogurt), it'll be just fine.

Ive made cookies like that before. They may just get a little soft and be gooey but they wont make anyone sick if they are only going to be out a few hours.

They will be just fine. Only things like mayonnaise you have to worry about. Besides how many times have you had cold cookies? No need for refrigeration.

Anything with butter = fat, should be refridgerated because the fat can go rancid after a while. If you put them in the freezer for a few hours before travelling, they should be fine. When you arrive, put them directly in the refridgerator. Happy Travelling!
