I've had Paulaner, Hacker Pschor, Summit and Goose Island 312. All pretty good. Paulaner being my favorite so far. Please recomend Heffe's/Wheat beers you've tried ONLY!

German wheat beers are a well-known variant throughout the southern part of the country, the name changing from Weizen in the western (Baden-Württemberg) regions to Weißbier or Weiße in Bavaria. Hefeweizen (German for "yeast wheat") is a variety in which the yeast is not filtered out, though Kristallweizen (filtered), Dunkelweizen (dark) and Weizenbock (higher alcohol content) varieties are also available. The filtration which takes the yeast out of Kristallweizen also strips the wheat proteins which make Hefeweizen cloudy.

My recommendations:

Weihenstephan Hefe Weissbier.
Yellow-gold hue with a subtle haze. Notes of pale malt, banana, and citrus zest follow through on a smooth, rounded palate with a very wheaty character and modest yeastiness. Finishes in a dry and refreshing manner.

Tucher Bräu Tucher Helles Hefeweizen.
Pale yellow hue. Subtle haze. Pours with a frothy head. Medium-bodied. Wonderfully classic aromas of banana, clove and floral citrus blossom. Clean pale malt has a nice wheaty mouthfeel with vibrantly frothy carbonation, and yeasty accents that follow from the aromas. Exceptionally stylish and well balanced.

Privatbrauerei Erdinger Hefe Weissen.
Cloudy pale yellow hue. Pours with a huge frothy white head. Sweet banana and citrus aromas follow through on a smooth and yeasty medium-bodied palate with a wheaty texture and a very smooth finish with lingering sweet fruity notes. Very stylish.

Privatbrauerei Aying Bräu-Weisse.
Hazy yellow color. Rich, classic banana and clove aromas. A smooth, frothy entry leads to a rich medium-to full-bodied palate with sweet banana puree, citrus, nutmeg and clove, and a hint of nuts. Finishes with a long, ripe fade of banana nut bread. Absolutely delicious.

Joseph Huber Brewing Co. Berghoff Hefe-Weizen.
Opaquely clouded, golden amber color. Banana nut bread dough have a creamy and lightly peppery, clove edge. A vibrantly frothy entry leads to a dryish medium-to full-bodied palate with honeyed toast, banana bread, dry caramel, spice and salt flavors. Finishes with a dry toast and nut fade. A dead ringer for a great German Hefe.

Hacker-Pschorr Brauerei Hefe-Weizen.
Hazy golden-amber hue. Yeasty and banana aromas follow through on a medium-bodied palate with a smooth, creamy mouthfeel that finishes with a hint of bittering hops. A rich and substantial style.

Two excellent ones I have in my fridge right now are Hoegaarden and Blanche de Chambly by Unibroue. Hoegaarden is my personal favorite. One of the most underwhelming I've had is Sam Adams' Hefe and it really disappointed me, but I typically like most of the beers they put out. Another one to try if you can get ahold of it is New Belgium's Sunset Wheat. There are tons of other good microbrew hefeweizens out there as well. If you haven't tried Blue Moon, it's worth a shot, but I use it as more of a benchmark when discussing different wheats to other people. It used to be my favorite, but not so much anymore, but always a good standby.

Summit Heffe is very good, also Leinenkugels sunset wheat is amazing
