sweet potato fries
2 pounds sweet potatoes, peeled and cut into 1/2-inch-thick fingers, 3 to 4 inches long
3 tablespoons Vegetable Oil
Salt and freshly ground pepper
Heat the oven to 450 degrees. Toss the potato fingers with the oil, salt and pepper in a large baking dish.
Bake the potatoes, shaking the pan every 5 to 10 minutes so that they cook evenly for 25 to 30 minutes until the potatoes are tender and well caramelized.

1/2 lb. sweet potatoes
1/2 lb. pears
1 small onion
In a small bowl combine:
1 tsp. vanilla extract
1 tsp. pumpkin pie spice
1 tablespoon apple cider vinegar
1 tablespoon walnut oil
1 tablespoon honey
preheat oven to 300 degrees
wash and peel sweet potatoes. Cut into 1/2 inch cubes.
wash, quarter, peel and core pears. Cut quarters crossways into 1/2 inch slices.
wash, peel and dice the onion.
toss sweet potatoes, pears & onion together in a covered casserole dish. Pour the vinegar mixture over the potatoes and stir to combine.
bake at 300 degrees for 1 hour or until the sweet potatoes are tender.

My aunt made a sweet potato caserole that was really different and really good. Pour drained sweet potatoes in oven ready deep dish and put 4 TBSP butter slices atop. cover geneously with red hots cinnimon candies and nutmeg, then a layer of mini marshmallows. cover with foil and bake about 30 minutes or more until mallows are melted and the candies are beginning to melt. It was yummy.

Baked Sweet Potatoes with Apricots and Bourbon:
1/3 cup bourbon
1/2 cup chopped dried apricots
5 pounds red garnet or jewel sweet potatoes (sometimes sold as yams)
1/2 cup firmly packed brown sugar
1/3 cup butter
1 teaspoon vanilla
1. In a small bowl, pour bourbon over dried apricots.
2. Scrub sweet potatoes and pierce each in several places with a fork. Place potatoes on oven rack or in a single layer on a baking sheet. Bake in a 350° oven until potatoes are soft when pierced, about 1 1/2 hours. Let stand until cool enough to handle, about 20 minutes.
3. Peel the sweet potatoes and place in a large bowl. Add brown sugar, butter, and vanilla to the bowl and mash with a potato masher or a fork until mixture is only slightly chunky. Stir in apricots and bourbon. Spoon into a shallow 2 1/2-quart baking dish and spread level.
4. Bake, uncovered, until hot in the center, about 30 minutes. Serve warm.
Yield: MAKES: About 10 servings

I really like sweet potatoe pie, which is similar to pumpkin pie. same texture, same spices. Its delicious. and also, candied yams, aka sweet potatoes chopped, boiled, the roasted with marshmalloes on top. I could list tons...I love sweet potatoes. plain roasted, baked in pies breads...anything.
