Royal Icing
When it sets it is a solid frosting for wedding and X-mas cakes. Can also be made into candy by adding flavour to the mix and using a bakers sleeve piped onto greaseproof paper. Alternatively you can use it to make cake decorations by adding colour to the mix.

INGREDIENTS
4 large egg whites
500 g icing sugar
1 teaspoon glycerin
DIRECTIONS
stir the sugar into 3 of the egg whites untill you get it falls heavyly of the back of a spoon (slopp! is the nois it makes*LOL*).
Take a whisk and whisk energetically for about 10 minutes or untill you get stiff peaks in the icing.
Add the glycerine (if this is for my x-mas cake separate half the mix in a tight lidded jar and store in the fridge).
Add the other eggwhite and beat again.
Ice your cake and leave for 24 hours.

Use the mix you have to ice the cake make it as flat as possible and then draw a ruler across the top lightly to get it flat (ish).
do the same with the sides.
Let the icing set for 24 hours.
After 24 hours take out the other half of the icing from the fridge and spread it thickly around the cake; leaving a 8 cm circle in the midle without icing.
Let this set for a couple of hours and then place a ribbon round the edge, put some eddible red berries in the circle and some eddible leaf (mint, rosemary, sage, anything).

I made extra icing when ours was eaten by the 2 1/2 yr old while constructing our house last week, I used about 3 cups of powdered sugar and about 2-3 teaspoons of milk or more as needed. Add one tsp of the milk at a time until it is all mixed into a thick consistency frosting, Add 1/4 tsp vanilla. beat with a mixer on low or hand beater until it is stiff and peaks and stays up when pulling spoon out. ( a couple minutes.) You can mix in food colors or we used dry koolaide mix, which gave us great colors and smells and flavor. I just made a few small bowls for the colors.

the quickest easiest best tasting royal icing
INGREDIENTS
3 cups confectioners' sugar
1/4 teaspoon cream of tartar
2 egg whites, beaten
DIRECTIONS
In a bowl, sift together confectioners' sugar and cream of tartar. Using electric mixer, beat in 2 beaten egg whites for about 5 minutes or until mixture is thick enough to hold its shape.

you can look on allrecipes.com for recipes, but I think it is just confectioner's sugar mixed with a little milk. You just mix in milk a teaspoon at a time until it is the consistency that you want.

6 egg whites, 2 tablespoons cream of tartar, and a 3 cups of powdered sugar--blend slow and well. Keep it stirred as you use it as it will dry out fast. Use paste colors, not liquid food coloring, or it will thin out
