I think you should politely introduce him to religion (any monotheistic religion which appeals to him). Since he's not religious now, that will be a step in the right direction. Be patient and understanding. Then, you can begin to discuss individual beliefs. It's a said fact that two people who spend more time together become more similar.

For me, it wouldn't matter if she was Jewish, Christian or Muslim, so long as she shared the same basic beliefs and respected my own beliefs.

If you really like him, it doesn't matter. What kind of a world is this were you can't be with people because they are different? There's gotta be something like that in the bible that says it's OK to be different. In truth, existence of God is everywhere when you look for it, but none when you are told he's there. Perhaps he should find someone who'll search with him rather than be with someone who'll believe in what is just told to them. I know I'm gonna get thumbs down because I believe in something different.

It would only be wrong to go after him with the intentions of changing him. Either you like him for who he is or you don't. It wouldn't be fair to go after him then tell him he needs to change to suit you.

What do you mean "go after him"?! Just don't force your beliefs on him.
