Cranberry Baked Brie Appetizer
This is a good one for Christmas!
Smooth and gooey baked brie cheese pairs beautifully with a tangy cranberry topping for an elegant holiday appetizer.
This is a wonderfully simple and elegant appetizer recipe that combines the seasonal flavor of cranberries with the classic presentation of baked brie.
Baked brie is always a favorite appetizer at parties and gatherings. There's something comforting about the smooth mild cheese combined with crisp crackers or soft bread rounds. Adding a tart cranberry sauce to the brie kicks up the flavor and makes the presentation even more stunning.
Serve the brie with gourmet crackers, rounds of French or sourdough bread, or wedges of flatbread. Don't forget to put out a couple of pretty spreading knives!

To garnish your Cranberry Baked Brie, use shaved or grated citrus rind, fresh mint leaves, surround the serving plate with whole fresh cranberries if desired. The finished brie will look great on its own though, with its shiny red topping.
Use the recipe below to make your own cranberry sauce, or use purchased whole berry cranberry sauce.
Cranberry Baked Brie
1 wheel brie cheese (8-12 ounces)
1/2 - 3/4 cup cranberry sauce (recipe below)
citrus rind, mint leaves, or whole cranberries for garnish, if desired
assorted crackers or bread rounds
Preheat oven to 350 degrees Fahrenheit.
Remove outer wrapping from brie wheel. Using a very sharp knife, remove the rind from the top of the wheel only, leaving the rind on the sides and bottom intact. Place brie in a shallow pie plate or casserole dish that is slightly bigger than the brie itself.
Spread the cranberry sauce over the top of the brie, to within 1/4 inch of the edge all the way around.
Bake brie in the preheated oven until heated through; about 12-15 minutes. Serve in the casserole dish or transfer carefully to a serving plate. Serve warm with crackers or bread.
Makes about 12-14 appetizer-sized servings.
Cranberry Sauce
1 cup orange juice or apple cider
2/3 cup granulated sugar
1 bag fresh or thawed frozen cranberries (12 ounces)
1/2 teaspoon ground cinnamon (optional)
In a medium saucepan, combine juice and sugar; bring to a simmer over medium heat, stirring constantly, until sugar dissolves.
Add cranberries and continue simmering until cranberries pop and mixture has thickened; about 10-12 minutes.
Serve warm or store in the refrigerator in an airtight container for up to one week.
Makes about 2 1/2 cups.

honey brie spread
INGREDIENTS
1 (14 ounce) round Brie cheese
1 (10 ounce) can refrigerated crescent roll dough
1 1/2 cups honey
1 1/2 cups pecan halves
DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Unwrap the wheel of Brie, and crescent rolls.
Unroll the crescent roll dough, and wrap around the Brie. Press seams together to seal in the cheese. Place in a 9x9 inch baking dish. Sprinkle pecan halves over the top, and drizzle honey over the whole thing.
Bake for 30 minutes in the preheated oven, until golden brown and cheese is soft. Serve with apple slices or cornbread crackers.

Sugar and Nut Glazed Brie
1/4 cup packed brown sugar
1/4 cup macadamia nuts or pecans
1 tbsp. brandy
1(14oz.) round Brie
apple wedges, for serving
pear wedges, for serving
2-3 tbsp. lemon juice
crackers,for serving
In a small bowl, stir together sugar, nuts, and brandy. Refrigerate for 24 hours or up to a week.
Preheat oven to 500 degrees.
Place the Brie on an oven-proof platter or pie plate.Bake 4-5 minutes or until brie is slightly softened. Spread the sugar and nut mixture in an even layer over the brie and bake for 2-3 minutes longer, or until sugar melts. Brush the fruit wedges with lemon juice and spread around one side of brie. Spread crackers around other side.

Make the simplest desert in the world. Buy some Brie, buy some pitted dates. Put them out on a plate with small spreading knives. To eat, cut a small piece of Brie, and take a date. Press them together with your fingers and enjoy! These are an unbelievably delicous desert without too much sugar, which is good for the holidays!

Get a good brie... not some supermarket wannabe. Warm it slightly, maybe 350 for 5 minutes. In a bowl mix 1/2 cup pecans, 1Tbsp brown sugar, 1 Tbsp honey, and a 1/2 tsp cinnamon, top the brie with this and heat again for about 10 minutes. Serve with a crispy bread. I like it, hope you do too.

Brown Sugar Brie
I have one that is delicious, sweet and easy. You will need:
1 brie round
slivered almonds
brown sugar
1 package of pillsbury crescent rolls
simple crackers like ritz or a butter cracker that doesn't have a strong flavour that will clash with the contents of the baked brie
You open the package of crescent rolls and make one flat piece out of all of them into a square making sure to seal the cut lines together. Place it flat on a baking sheet, set the brie round on it on the middle of the square of pastry, sprinkle brown sugar over the top of the brie in the amount you like but not too much, then sprinkle slivered almonds over the sugar . Fold the pastry over so it has four triangles raised and pinched along the edges to seal it like a sandwhich cut in triangles. Make sure it is sealed or else the melting cheese will leak out. Bake it in a 400 degree oven for about 20 minutes until golden brown. Then cool until warm and set on a serving plate or platter with crackers and a knife to cut into it in slivers or wedges .
This is decadent and rich but oh wow is it good! If you prefer no sweetness you can add things like basil instead of the brown sugar but the brown sugar recipe is THE best one.
Then, as the dutch say , Eet Smakelijk! (eat tastily)
