They get sold as leftovers or are traded to other dealers that are looking for one for their customers. The manufacturer gives the dealers special discounts to get rid of the "old" inventory. And in some cases, the manufacturer will take back the vehicle. And in that case, the manufacturer takes it at a huge discount. Dealers accept that price just to get the older car out of their inventory. It is usually the manufacturer that will donate, or use the vehicle as a "program car" for their special employees.

They get sold eventually. There's no such thing as an unsold car. The dealers cut the price on leftovers from the prior model year and move 'em out. They don't get donated, crushed, or returned to the manufacturer.

Markdowns, rebates, clearance sales. used as "program cars" maybe even relegated to use as loaners. Bought at discount by rental companies. Sold to smaller deaers. stop me if I get close...
The market will provide. Just maybe not at the profit level we would prefer.
