We do not have any vegetable oil, but have olive oil and butter. we're worried to use the olive oil, so we thought we'd try butter
how much should we use for cupcakes?

Do Not Use Butter!! plz! I make cupcakes and cakes for a living, and have used olive oil, there has been no problem with the taste whatsoever! In fact I use olive oil more times than I do any other oil...and my cupcakes and cakes seem to be fluffier and moister! Why are you worried to use olive oil??

If the recipe calls for vegetable oil, that's what you need ... you can't use butter.
