i ask questions sometimes to answer them......do you say I'm going to eat 3 cheese or cheeses soup?

pizza with more than one cheese is said to have (x) TYPES of cheese.

Cheeses is the plural form...as in, "there were several different cheeses on the tray."

but I think if it's all the same type of cheese then you just say cheese. "types of cheese" or "slices of cheese."

cheese is its own plural, the only time I've seen "cheeses" is when there's many different types being talked about.

You can say both! But they are both adequate on different occasions. For example; cheese can be used both singular and plural, like the word 'fish', but cheeses represents something like "different types of cheeses" yet it is inadequate to say "may I please have some cheeses" unless of course you mean different types.

Cheese is one of those nouns that don't really have a singular or plural form, like bread or cream. We don't say I'd like a bread, we say I'd like a slice of bread. We don't say I'd like a cheese either. They have a word for those types of nouns, but I don't remember what it is. Anyway, there are situations in which you're talking about many different kinds of cheese, and you refer to them as the different cheeses, and as far as I know, that's acceptable in English. It's like a bread store advertising that they carry a variety of breads, but the word "breads" isn't referring to specific loaves or something; it just means kinds of bread.
