I had the most random strand of grey hair and I used to pluck it out whenever it grew out but it's gone now. I never really knew why so I'm curious too.

No, you have one hair follicle per hair underneath your scalp. When one hair comes out of a follicle then another one grows back. Just one. And it doesn't affect the other hair follicles.
