I'm making fish and chips...what's the best temperature for the oil?

It sounds like you're doing everything you can to prepare the fish and chips the best way possible. Like the others have said, fish and chips aren't bad if they're eaten in moderation. Don't let other people make you feel guilty just because some people can't control themselves and eat fried food too often. It's not your responsibility to monitor what they eat or how often.

You really do not need a thermometer to fry fish, I do not have one and I have always been able to fry. Heat the oil in a pan deep enough to hold the fish then wait until the oil is hot enough that when you drop in a bit of the batter or coating it instantly sizzles. Then you are ready!

around 400 degrees for Canola Oil

around 380 for peanut oil...
