As a Spanish-speaking gringo with a lot of experience in teaching the language, and a lot of experience with Spanish majors, I would tell you that your major field of opportunity is in teaching the language. Translation is a remote possibilty depending on your ability because translation is a far cry from college Spanish which focuses mainly on grammar, then literature studies. I would say that interpretation is completely out of the picture until, as with translation, you get further and more specialized training in either or both areas. Most law schools want a student with a wide academic background on his transcript. The more areas you're exposed to, the better your ability to interpret the law. Major companies are impressed with people who have degrees in languages, but if you can't perform to their expectations in business language for the language you have your degree in, this won't work out for you. You're doing well to ask about your possibilities. If you have any teaching credits on your transcript, especially ESL, you could try going to a country where the language of your major is spoken and teach there a few years in order to polish your ability and be able to work for a major company if that might be a goal you're looking at. Other than these suggestions, I can't say much more without having a direct discussion with you.

I've worked in interpretation, translation, and have taught both English and Spanish.

You can work as a translator, that's always fun, you can become a spanish soap opera author, make lots of cash, you can move to spain, all kinds of stuff. But really, the options are endless, but have a back up plan.
