I'm very sad that over the holidays my family gourges out on all the cookies and all the cook books have failed and I need some resipies. thanks :)

here are a few sugar free recipes...

sugar free sour cream linzer cookies
INGREDIENTS
1/2 cup butter
2 cups all-purpose flour
1 cup granulated artificial sweetener
1/3 cup sour cream
1 egg
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon baking soda
2/3 cup ground almonds
1/2 cup raspberry preserves
DIRECTIONS
In a large mixing bowl , cream together butter and sugar substitute with an an electric mixer. Gradually add egg and vanilla while mixing. Sift together flour, baking powder, and baking soda. Stir in by hand. Finally, stir in sour cream and ground almonds. Divide dough in half and refrigerate for at least 2 hours.
Preheat oven to 375 degrees F (190 degrees C).
On a well floured surface, roll out each half of the dough to 1/8 inch thickness. Cut out cookies using a 2 inch round cookie cutter. Using a 3/4 inch star or heart shaped cookie cutter, cut the center from half of all the rounds. Place cookies 1 inch apart on an ungreased cookie sheet and bake in preheated oven for 6 to 8 minutes. Remove cookies from cookie sheet and cool on a wire rack.
To assemble: Stir the spreadable fruit until fruit so it is smooth. Spoon 1/2 teaspoonful of fruit onto each of the cookies without the holes. Set a cookie with a hole on top of the fruit layer. Enjoy!


sugar free christmas cutout cookies
INGREDIENTS
1/2 cup shortening
3 tablespoons granulated artificial sweetener
1 egg
2 1/2 cups cake flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup skim milk
2 tablespoons water
1 teaspoon vanilla extract
DIRECTIONS
Cream shortening, add sugar replacement and egg; beat well. In a separate bowl, combine dry ingredients, add the milk, vanilla, and water. Put in flour mixture and stir well.
Chill dough 2 to 4 hours.
Preheat oven to 325 degrees F (165 degrees C).
Roll out 1/8 inch thick and cut the cookies. Bake for 8 to 10 mins. Cool. Keep in air tight container.


Sugarfree chocolate tea cookies
INGREDIENTS
1/4 cup shortening
3 tablespoons granulated artificial sweetener
1 egg
1/2 teaspoon vanilla extract
2 tablespoons skim milk
1 1/4 cups cake flour
1 (1 ounce) square unsweetened chocolate, melted
DIRECTIONS
Cream shortening. Add sugar replacement, egg, vanilla and milk and blend well.
Add half the flour, mix well and stir in chocolate and the rest of the flour.
With cookie press, press onto an ungreased cookie sheet. Use hands and make small ball if you do not have press. Putting flour on your hands, this keeps dough from sticking. Press down with fingers on top of each cookie.
Bake at 350 degrees F (175 degrees C) for 20 minutes.

SUGAR FREE COOKIES

1 3/4 c. all-purpose flour
1/2 tsp. baking powder
3/4 c. butter
1 (4 serving) pkg. strawberry, raspberry, or lime sugar free gelatin
1 egg
1 tsp. vanilla

Mix flour with baking powder. Cream butter and gelatin, beating well. Beat in egg and vanilla. Gradually add flour mixture, blending well. Roll out cookie dough and cut into shapes. If you have a cookie press you may use it. Put on ungreased cookie sheet. Bake at 400 degrees about 8 minutes or until edges are golden brown. Makes about 5 dozen.

I don't have a recipe handy but I have found the web site for splenda very helpful. Some recipes requires simple changes like a little more baking soda or something like that. Please check it out I make a lot of quick breads with splenda and you can't tell the difference.
