I have a rib roast that is 10 3/4 pounds with 6 ribs and I'm trying to figure out if I cook the rib roast at 280 degrees.And the temp to be ready at 120 degrees how long will this take to cook.

All the recipes I have seen call for higher temperatures.

Preheat oven to 450 degrees F. Place roast on a rack in a 9 x 12 inch roasting pan. Add 2 C. red wine to the bottom of the pan or a good beef stock.

Roast for 20 minutes at 450°F. and then turn oven down to 350°F. Roast 18 minutes per pound for rare or 22 minutes per pound for medium done. Let stand 15 minutes before carving. Serve with pan juices.

For food safety you should cook it until the temp reads at least 160 degrees farenheit. This is also the temp that pasteurization is done at (and with eggs). If it's lower than that you can get really bad food poisoning.

to tell the truth I can't answer your question but I want to know the answer too. You have to love slow cooked .
