You can make a Tempura batter and shake off as much as you like then bread them in Panko or Breadcrumbs
1 egg
1C cold water
1C flour
Mix it up and dip away

Make sure your oil is hot enough. Put calamari in a beaten egg first then roll in breadcrumbs and let them sit for 20 minutes first before frying.

Calamari can be dipped in milk, than seasoned flour and fried, or milk, than flour, than egg and dry breadcrumbs but its a really messy process.
You can get a good crust on it from just the milk and flour, shaking off the excess before you fry it.

before frying put or mix egg on your seasoned calamaris, (quantity of eggs depend on the quantity of your calamaries). Egg is a binder so that breadcrumbs stick on it before you fry. First seasoned your squids for at least one hour, then mix with egg. Put your breadcrumbs on a seperate dish. Be sure its dry. Then roll on it the calamaris before frying.
