The best choc-chip cookies:

INGREDIENTS
4 1/2 cups all-purpose flour
2 teaspoons baking soda
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages instant vanilla pudding mix
4 eggs
2 teaspoons vanilla extract
4 cups semisweet chocolate chips
2 cups chopped walnuts (optional)

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.
They're addictive and very fattening!

The simplest cookie "recipe" I've found (which requires no machinery!) is this: 1) Buy a tube of Christmas Cookie Dough with the built-in Reindeer Faces and/or Christmas Trees; 2) Slice off slices and place on cookie sheet; 3) Bake; 4) EAT!! This doesn't help you with your Kitchen Aid dilemma... but the cookies are EASY and GOOD! :)

Well, the easiest cookies would be the refrigerated cookie dough that you just slice and bake. But, if you want homemade recipes, then an easy one that I do is Chocolate Thumbprints.
Cookies:

1 cup softened butter
1 cup sugar
1 tsp. vanilla
1/4 tsp.salt
2 oz. (2 squares) unsweetened chocolate, melted and cooled
1 egg
2 1/2 cups flour

Filling:
1/4 cup softened butter
2 cups powdered sugar
1-2 tbsp. milk
1/2 tsp vanilla
Few drops red or green food coloring
1/4 cup crushed peppermint candy

In large bowl, combine 1 cup butter and sugar; beat until creamy. Add 1 tsp. vanilla, salt, chocolate, and egg; mix well. Lightly spoon flour into measuring cup and level off. Stir flour into creamed mixture; mix well. Chill dough 30 minutes. Heat oven to 375. Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets. With thumb, make imprint in center of each cookie. Bake 8-10 minutes or until edges are set. Immediately remove from cookie sheets; cool.
Combine all filling ingredients except peppermint candy; mix well. Fill each cookie with 1/2 tsp. of filling. Sprinkle with candy. Makes 6 dozen.
Tip: To make deeper imprint in cookies, press again immediately after removal from oven.

These are yummy & very pretty. you can use any kind of cake mix you want. I made some lemon ones, choc. ones & also got a funfetti cake mix (the white with the sprinkles in it) and divided it up, 1/2 with red food coloring & 1/2 green food coloring & made them really cute.
easiest cookies ever:

Lemon cookies:

1 (18.25 ounce) package lemon cake mix
2 eggs
1/3 cup vegetable oil
1 teaspoon lemon extract
1/3 cup confectioners' sugar for decoration
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well blended. Drop teaspoonfuls of dough into a bowl of confectioners' sugar. Roll them around until they're lightly covered. Once sugared, put them on an ungreased cookie sheet.
Bake for 6 to 9 minutes in the preheated oven. The bottoms will be light brown, and the insides chewy.

You have a few options. FoodNetwork.com has a ton of easy recipes, along with how to videos. But you can also try these things with pre-made dough:

Take chocolate chip cookie dough and added a spoonful of peanutbutter to the middle of them before you bake them, creates a very gooey treat!

Take sugar cookie dough, sprinkle on colored sugar (like red or green, if you don't have any, make your own with food coloring, couple drops will do ya, and mix in a baggy with plain sugar,) and some cinnamon, then you have holiday snickerdoodles!

You can also roll out sugar cookie dough and use cookie cutters, and then sprinkle on different colored sugar, that's my favorite because you can do it with family!

take it off the heat
add 1 1/2 cups of chunky peanut butter
add 2 cups of quick cook oats
stir until mixed
take a tablespoon and drop spoon fulls on to wax paper and let cool
