You can start by making meatballs....easy to do this in large batches, and they freeze really well. You can eat your first batch for X-Mas Eve, or New Years Eve! Also, if you just freeze them plain, as-is, then you can take them out for quick dinners throughout the year...like spaghetti and meatballs in tomato sauce, Swedish meatballs in a white sauce over mashed potatoes, etc.
You could also do hamburger patties, freeze them, and just take them out as you need them.
Or fry some up with onion and have it ready anytime you need to throw together a quick hotdish.
There are a million things you can do with ground beef.
If the 50 lbs aren't already broken down into 1 or 2 lb bags, I would do that and freeze the rest uncooked, thawing as you need to.

PS - I just thought of another thing you can do that my sister did when they got all this beef from her Father-In-Law...
She bought 10 packs of taco seasoning, fried up 10 lbs of beef with some onion, added the seasoning and cooked according to package directions. Then she seperated it back into 1 lb packs and stuck it in the freezer for later use. She and her family (husband and two teens) could pull it out any time for a plate of quick nachos or a fast taco supper when things got really hectic!!

First off, Freeze what you don't need in small individual bags ( that way when you need a quick meal you wont need to defrost 45 pounds of meat). If you must cook it all you should have a New Years part and make Meatballs, Burgers, and Chilii etc.. easy stuff
The website i have listed has great recipes. Chil is very easy to make. Burgers and meatballs are also simple . All you need is a few spices if you cant find an easy recipe. I use emerils essence on everything. You should by some spices and vegetables to go with all this ground beef.

Here is a 30 minute meal with ground beef:
Favorite Salisbury Steak
1 lb. extra lean ground beef
1/2 cup unseasoned dry bread crumbs
1/2 cup milk
1 egg white
1/4 cup finely chopped onion
1 tsp. Worchestershire sauce
1/4 tsp salt
1/4 tsp. pepper
Gravy;
3/4 cup beef broth
1/4 cup dry red wine or beef broth
1 tblsp. corn starch
1/4 tsp dred thyme leaves
1 (2.5 oz.) jar sliced mushrooms, drained
In medium bowl, combine all patty ingredients: mix gently, (Mixture will be moist.) Shape into 6 oval patties, about 3/4 inch thick.
Spray large nonstick skillet with nonstick cooking spray.. Heat over medium heat until hot. Add patties, cook 3 minutes on each side or until browned. Remove patties from skillet: drain, if necessary.
In small bowl, combine broth, wine, cornstarch and thyme: blend well. Pour into same skillet. Cook over low heat until mixture boils and thickens, stirring constantly. Stir in mushrooms. Return patties to skillet. Cover: simmer about 15 minutes or until patties ar no longer pin in center.

HOMEMADE SPAGHETTI AND MEATBALLS
this is a start to get rid of some of that meat!
2lbs GROUND BEEF
2 TABLESPOONS ITALIAN SEASONING
2-3 TABLESPOONS GARLIC POWDER
1 EGG
1 12oz. PACKAGE OF ANGEL HAIR NOODLES
1 TABLESPOON ONION POWDER
6 CANS TOMATOE SAUCE
take 1 pound of hamburger meat and mix 1 egg, 1 tablespoon onion powder, 1 tablespoon garlic powder, salt&pepper, squish together with your hands, after it is mixed well, roll out into meatballs. Bring water to a boil and drop meatballs in, boil for about 30-45 minutes, while these are boiling, brown the rest of the meat adding seasonings to taste...when done, drainboth meatballs and other browned ground beef. Pour all cans of tomatoe sauce into pan with rest of seasonings, put meat in sauce and turn on low for about 3-4 hours. When sauce is done.....put water in pan with half stick of butter and salt to taste. Bring to a boil and add angel hair noodles. let cook for about ten minutes... then drain and spray with cool water. THIS STUFF IS THE BOMB =)

"A true fusion of 'Tex' and 'Mex' style chili. I've made this recipe dozens of times, and it is great. Each bite slowly delivers a sweet flavor followed by dry heat afterwards. It takes a while to prepare, but well worth it. You can use any type of beans you like, and try different dried chile varieties."
INGREDIENTS
10 dried ancho chiles - chopped, stemmed and seeded
1/2 cup water
1/4 cup white wine vinegar
3 pounds hot Italian sausage, casings removed
3 pounds ground beef
1 white onion, diced
1 red onion, diced
1 sweet onion, diced
1 cup diced celery
1 cup diced carrots
10 cloves garlic, sliced
1 teaspoon salt
1 teaspoon black pepper
1 (6 ounce) can tomato paste
1 cup dry red wine
4 (14.5 ounce) cans diced tomatoes
1/4 cup Worcestershire sauce
1/4 cup hot pepper sauce
1 tablespoon chili powder
2 teaspoons ground cumin
1 tablespoon chopped fresh parsley
1/2 cup honey
1 (16 ounce) can kidney beans, drained
1 (16 ounce) can pinto beans, drained
DIRECTIONS
In a small bowl, soak chiles in water and vinegar for 30 minutes. After soaking, puree in a blender or food processor until very smooth, about 5 minutes; set aside.
Place sausage and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Remove meat from pan, and set aside. In a large pot, Heat 3 to 4 tablespoons of the meat drippings over medium heat. Saute white onion, red onion, sweet onion, celery, carrots and garlic until onions are soft and translucent. Season with salt and black pepper. Stir in tomato paste, and allow to caramelize. Pour in wine to deglaze the pot, scraping up any bits stuck to the bottom.
Stir in cooked meat, tomatoes, Worcestershire sauce and hot pepper sauce. Season with chili powder, cumin and parsley. Bring to a boil, then stir in blended chile mixture and honey. Carefully mix in kidney beans pinto beans without breaking them. Cover, and simmer for 3 hours. Stir and scrape the bottom every hour or so.

get alot of freezer bags so it doesn't go bad and you can get a whole lot of meals out of 50lbs...wow!
american goulash------brown 1 lb of ground beef with a diced onion. Add a can of diced tomatoes and a can of tomatoe sauce. Let simmer for 20 mins and mix with cooked elbows...ummmm good!
tacos, sloppy joes, hamburgers, chili, meatloaf, meat spaghetti sauce or meatballs....tons of stuff you can do with it

stuffed bell peppers....
typical taco additives topped with cheese and stuffed in the end of a bell pepper, then baked in the oven. 325 for about 20 minutes

potato goulash.also you could make taco meat,spaghetti sauce and freeze the taco meat and can the sauce.what about cooking some burger patties and freezing them or make some burritos and freeze then.

Ground Beef Stroganoff
INGREDIENTS
* 1 pound ground beef
* 1/2 cup chopped onion
* 1 (4.5 ounce) can mushrooms, drained
* 1/2 teaspoon garlic powder
* 1/2 teaspoon mustard powder
* 1/2 cup sour cream
* 1/2 cup mayonnaise
* 1/2 cup beef broth
* 1 (16 ounce) package wide egg noodles
DIRECTIONS
1. Break up ground meat into a large skillet, and add onion, mushrooms, garlic powder, and mustard powder. Cook and stir over medium heat until the meat is browned and onion is tender. Drain off excess fat.
2. In a small bowl, combine sour cream, mayonnaise, and beef broth. Stir into beef mixture, and cook over low heat for 10 to 15 minutes. Do not stir too much.
3. Meanwhile, cook pasta in a large pot of boiling water until done. Drain. Serve sauce over hot noodles.
Ground Beef Mexican Style
NGREDIENTS
* 1 pound ground beef
* 1 cup salsa
* 1/2 cup water
* 1 green bell pepper, chopped
* 1 bunch green onions, chopped
* 1 (8 ounce) package wide egg noodles
* 1/2 cup sour cream
* 1/2 cup shredded Cheddar cheese
* 1 tomato, chopped
DIRECTIONS
1. In a large nonstick skillet, cook and stir ground beef until browned. Drain off excess fat.
2. Stir in salsa and water. Simmer for 10 minutes.
3. Meanwhile, cook pasta in boiling water until al dente. Drain.
4. Stir in green pepper and onions, and continue simmering until veggies are crisp/tender. Stir in noodles and sour cream. Sprinkle grated cheese on top, and cover pan until the cheese melts. Sprinkle chopped tomatoes on the top, and serve.
Asian Ground Beef and Pepper Saute
INGREDIENTS
* 1 cup dry jasmine rice
* 2 cups water
* 1 pound lean ground beef
* 1 tablespoon olive oil
* 1 red bell pepper, chopped
* 1 green bell pepper, chopped
* 1/4 cup chopped fresh parsley
* 2 large cloves garlic, thinly sliced
* 2 tablespoons minced fresh ginger root
* 1/4 teaspoon crushed red pepper
* 1/4 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/4 cup beef stock
* 1 tablespoon low-sodium soy sauce
* 1 teaspoon chile paste
* 1/2 teaspoon Worcestershire sauce
DIRECTIONS
1. In a medium saucepan, bring the rice and water to a boil. Cover, reduce heat, and simmer 20 minutes.
2. In a skillet over medium heat, cook and stir the ground beef until evenly browned. Drain, and set aside.
3. Heat the olive oil in the skillet over medium heat. Stir in the red bell pepper, green bell pepper, parsley, garlic and ginger. Season with red pepper, salt, and pepper. Cook and stir until tender.
4. Return the beef to the skillet. Mix in the beef stock, soy sauce, chile paste, and Worcestershire sauce. Cook and stir until thickened and heated through. Serve over the cooked rice.
Ground Beef Stew
INGREDIENTS
* 1 pound ground beef
* 6 medium potatoes, peeled and cubed
* 1 (16 ounce) package baby carrots
* 3 cups water
* 2 tablespoons dry onion soup mix
* 1 garlic clove, minced
* 1 teaspoon Italian seasoning
* 1 teaspoon salt
* 1/4 teaspoon garlic powder
* 1/4 teaspoon pepper
* 1 (10.75 ounce) can condensed tomato soup, undiluted
* 1 (6 ounce) can Italian tomato paste
DIRECTIONS
1. In a large skillet, cook beef over medium heat until no longer pink; drain. In a 5-qt. slow cooker, combine the next nine ingredients. Stir in the beef. Cover and cook on high for 4-5 hours. Stir in soup and tomato paste; cover and cook for 1 hour longer or until heated through.
