Obviously it has to do with food, but what does the word actually mean?

Kosher is food that is suitable for people of the Jewish faith to eat according to their religous laws

Technically Kosher comes from the hebrew word Kashrut meaning FIT. In this context in means fit to be eaten.

If you wish to know a little about what makes the food FIT:

The Torah(five books of Moses) contain 613 mitzvot(commandments), many of these are about keeping Kashrut or Kosher.
It describes what is to be eaten as an example:
It must be disease free.
The animal must chew it's cud & have split hooves. Pig have split hooves but doesnt chew it's cud
No birds of prey. No Vulture & eagle
Fish must have scales & Fins (no shark, lobster,shrimp)

How it's to be killed
the Carotid Artery, Jugular Vein & Trachea in the neck must be cleanly severed. Prayers are said while being killed. The blood must be removed by specific methods salting boiling or cooking (not rare)

How it is prepared & served
Milk & meat must not be mixed. Milk gives life & must not be served with the dead animal. A Kosher hamburger becomes unfit by adding cheese. Once a utensil or pot touches one it must not be used by the other. A bowl for milk & cereal can not be used for Beef soup

For nomal meals 2 sets of dishes are kept. See below for 4 sets during Pesach(Passover).

During the Hebrew Holy day of Pasach(passover) leavened (the food has something that makes it rise. IE yeast or baking powder or soda) foods are forbidden.
No Bread or cake or muffins. During these 8 days another 2 sets(one for meat & one for milk) of dishes are used since these dishes can't touch leavened food

Kosher has to do with the way food is prepared. Kosher meat is taken from an animal screened for disease and found clean...who was killed in a way which caused it no pain, among other things. Kosher is very natural, chemical free...organic and clean.

Kosher means clean. Animal has to be killed right away within seconds the animal must die without suffering that's kosher.

Concerning meat, the main artery in the leg must be removed.
And meat and dairy products must not be served together.

And there are some other laws.

For Jewish, see top. For Muslims : free of "porks and any product from it; other forbidden animals and any product from it, if lamb/beef/chicken meat, must be from the stock that were butchered using the name of Allah, etc.

In its strictest meaning it means only "suitable according to Jewish law", but as slang it generally means legitimate, acceptable, permissible, genuine or authentic in a broader sense.
