it actually doesn't have anything to do with it being high in fat and cholesterol.
coumadin acts as an anticoagulant by inhibiting Vitamin K -dependent clotting factors in the liver.
So it's important not to eat a lot of foods that are high in Vitamin K so that the coumadin works properly.
According to the list, mayonnaise is very high in Vitamin K and should be avoided.

Mayonnaise is made with a vegetable oil thats very high in Vitamin K content.
Vitamin K increases the clotting factor in blood.
Which counteracts the effects of Coumadin,,which is an Anti-Coagulant----it Reduces blood's clotting factor
It has nothing to do with fat,,,
otherwise the vegetable oil would be Beneficial as always in reducing cholesterol/dissolving fatty deposits.
I suggest you do some research on Vitamin K's effect on Coumadin.
There's a LOT of common foods where it's present and it WILL interfere with what the drug is trying to accomplish
Edit:
Here's some info on Coumadin & Vit K/various Foods that may be useful.

rubbish...there is nothing wrong with real mayonnaise
a serving of mayo has 11 grams of fat of which 54% is polyunsaturated, 22% is monounsaturated and 13% is saturated with 5mg of cholesterol.
#1 - cholesterol is not BAD for the human body it is the carrier of the cholesterol that's important, there are low density lipoproteins (LDL) or high density lipoproteins (HDL).
#2 - fat isn't bad for you. Every degenerative disease has been linked to either a lack of fatty acids in the diet or the inability of the body to metabolize a certain fatty acid.

Leave a jar of mayo in a car on a hot day for 3 hours, and come back. That clear stuff is fat.

Do your grocery shopping with a list and a period of time limit; that way, you're not as likely to stray into the highly processed foods section.

It's the eggs in the mayo. Did you know when you are baking something and the recipe calls for an egg or two and you find you are out of eggs, you can use a table spoon of mayo to substitute for an egg?

saturated fat (it's made out of egg yolk and oil).
Try fat-free mayo or Miracle Whip if he really misses the taste, but a lot of people do not miss mayo and do OK using mustard, low-fat sour cream or pesto (depending on the type of food you're substituting the mayo in ) instead.
