something simple...pick up some chipotle marinade and mesquite marinade from the store and mix them ,to this mixture then add 1\4 cup of brown sugar, two table spoons of soy sauce,1\4 cup of beer(optional)..let marinate for 1 to 2 hours.if you want to marinate over night add 1\4 cup of vegetable oil( this will keep it from getting salty)If you want your steak to be very tender, put about 6 steaks in some water and add 1\2 teaspoon of baking soda per steak(3).let them sit about 6 hours.Wash off the solution and then put them into the marinate no longer then30 minutes. grill and enjoy the compliment coming in.

steak marinade!!!
ingredient:
1 recipe Chimichurri Rojo
Two 1-pound skirt steaks
Kosher salt and freshly ground black pepper to taste
1 recipe Cebollas Fritas
1/4 cup assorted olives, pitted and chopped
1 tablespoon minced Italian parsley
Directions:
Pour 1/2 cup of the chimichurri into a large resealable plastic bag. Add the skirt steaks and marinate overnight in the refrigerator. (Reserve the rest of the chimichurri for serving).
Prepare a hot fire in a grill. (Prepare the onions while the grill heats.)
Remove the steaks from the marinade and, turning once, grill to desired doneness. (Because they are thin and have been marinating overnight, they will cook very fast.)
Cut each steak in two, arrange them in the center of four warm plates, and season with salt and pepper. Top with the onions and garnish with the olives and parsley. Serve with the reserved chimichurri on the side.
Recommended wine: A Nebbiolo d'Alba or a Cabernet Sauvignon from Mendoza, Argentina.

If the steak is of good quality, it needs no marinade. Salt & fresh, black pepper is best. Simple, so the meat can take the spotlight. If it is a poorer cut, try bottled Italian salad dressing mixed with a bit of soy sauce.
