Wasabi is generally sold either in the form of a root, which must be very finely grated before use, or as a ready-to-use paste, usually in tubes approximately the size and shape of travel toothpaste tubes. Once the paste is prepared it should remain covered until served to protect the flavor from evaporation. For this reason, sushi chefs usually put the wasabi between the fish and the rice.

Wasabi (Japanese: ワサビ, 山葵 (originally written 和佐比) ; Wasabia japonica, Cochlearia wasabi, or Eutrema japonica) is a member of the cabbage family. Known as Japanese horseradish, its root is used as a spice and has an extremely strong flavor. Its hotness is more akin to that of a hot mustard than a chili pepper, producing vapors that burn the nasal passages rather than the tongue. The plant grows naturally along stream beds in mountain river valleys in Japan. There are also other species used, such as W. koreana, and W. tetsuigi. The two main cultivars in the marketplace are W. japonica var. Duruma and Mazuma, but there are many others.

In my opinion the choice is for your tastebuds to decide. If you enjoy a really hot wasabi buy a Japanese brand powdered wasabi, Mix it with a tiny amount of hot water to a mallealbe consistency and shape wasabi into a tiny mountain shape. Put it on a saucer and cover it with a glass and the next day the wasabi will be highly potent with a flavour that suits my tastebuds too. The tube wasabi is easy but not so flavoursome or hot imo.

WASABI is a bean, looks much like the garbonzo bean, but greenish in color, this bean is dried out, and crunchy if you just pop them in your mouth. being that they are dried out, the can be ground down to a powder, and once in powder form by adding water or whatever, maybe a vinigar as well, makes the past
when you have sushi the serve the "wasabi paste" on the side for you to use along with your meal, it is a horshradish, and seriously strong.
one should not take a big ole bite of that stuff, unless you have serious sinus problems.
the burn goes away after about 30 seconds or so, but if you dont like horshradish, you wont like this stuff

You can make wasabi paste by mixing wasabi powder with water. Wasabi powder and paste can be purchased at most grocery stores in the Asian food section. Be carefull....wasabi is hot....but soooooo delicious!!! Enjoy!

Basically the wasabi that you get in Sushi restaurants. They take wasabi powder and mix it with water and voila! yYou have wasabi paste.

Wasabi is like a very strong horseradish. It is bright green in color & comes in different forms, paste being one. Commonly served as a sushi condiment.
