Well, for dinner you can get a turkey breast which is smaller and simpler to bake, and makes good leftover sandwiches. You could amke some baby carrots, stovetop stuffing, and microwave baked potatoes.

For breakfast you can cook the night before, this is called Christmas morning casserole:

6 eggs
6 slices bread, cubed or just torn up in small peices
2 cups cheese (cheddar or cheddar/jack)
2 cups milk
1 pound sausage, cooked
1 t. dry mustard
salt & pepper

mix all ingredients and leave in fridge overnight. Cook first thing in the morning at 350 for 45 minutes.

go to Wal-Mart. Buy a spiral sliced smoked ham, heat it up.
Country crock makes awesome microwaveable mashed potatoes that taste like the real thing! Buy some fresh green beans and steam them on the stove top. Buy a pecan pie and a tub of cool whip. After you eat, microwave slices of pie and top it with cool whip. Oh yeah, toss some sliced carrots and sliced mushrooms in with those beans, and add a package of "King's Hawaiian" honey wheat dinner rolls.

Roast cornish game hens. Stuff them or try the recipe below. They make for an elegant presentation without a lot of fuss. Serve with comfort food sides like mashed potatoes and cornbread.

FISH WITH CURRIED CUCUMBER TOMATO WATER

1 (1/2-lb) cucumber, peeled and chopped (1 1/2 cups)
1 (1/4-lb) tomato, chopped (3/4 cup)
1/4 teaspoon curry powder (preferably Madras)
1/4 teaspoon salt

Purée cucumber, tomato, curry powder, and salt in a blender until smooth, about 30 seconds.
Line a fine-mesh sieve with a dampened paper towel and set over a large glass measure, then transfer cucumber mixture to sieve and let drain until liquid measures 2/3 cup, about 20 minutes.

If liquid measures less than 2/3 cup, gently squeeze paper towel over sieve until liquid totals 2/3 cup. Discard solids and transfer liquid to a 2- to 3-quart saucepan.

Boil cucumber tomato water until reduced to about 1/3 cup, then remove from heat and cool to room temperature, about 30 minutes.

Pour on top of fish and enjoy!!!
