Okay. I am making 2 easy Philly cream cheese cakes (mint choc chip). Due to high demand, can I cook 2 at a time? Do I have to extend the baking time? Do I have to use two different racks and switch them or can I set them side by side?

If your oven is large enough you can. I would separate pans a few inches apart on the same rack. 2 racks would mean opening the oven door which could disrupt baking process. I would not add extra time unless the finished product is obviously undercooked.

Then place 1 cheesecake in a padded box and mail it to me....yummy.

Go for it, put them side by side or staggered diagonally on the same rack. If you notice one is getting way more cooked, or one side is more cooked, just switch them around halfway through baking.

If your oven is big enough. I think that they should be put apart, though. Two separate pans. Good luck with those cheesecakes!

Yes you can bake 2 at one time. One for you and one for me.

As long as they both fit...and you can put them on the same rack too.
