I'm thinking of making quiche now and freezing it for when my guests arrive after Christmas. But will the crust get soggy if I pour the filling in and then freeze it? Would I thaw it before baking?
If I bake it first and then freeze, it seems to me the texture of the egg would be a bit rubbery if I then reheated it.
I know there are frozen quiches in the stores, so obviously it can be done, but who knows what preservatives they use.
Has anybody done this?

I HAVE quiche



1 cup shredded cheddar cheese
1/2 cup cooked and cubed chicken meat or ham or bacon
1/2 cup frozen zucchini or spinach or broccoli, cooked
3 eggs
1/2 cup baking mix
1/2 teaspoon salt
1 dash garlic powder
1 tablespoon dried onion flakes
2 tablespoons chopped fresh parsley
1 1/2 cups milk
1/3 cup olive oil
1/2 teaspoon paprika



Preheat oven to 350 degrees F.
Generously grease a 9 inch pie pan.
Spread shredded cheese across bottom of pie pan.
Cover cheese with meat and vegetables.
In a blender, combine eggs, baking mix, salt, garlic powder, onions, parsley, and milk.
Blend until smooth, then add olive oil.
Blend until combined, then pour mixture over meat and vegetable layer.
Sprinkle with paprika.
Bake in preheated oven for 40 minutes.
Cool 10 minutes before serving.

Yes. We bake our quiche at the restaurant on Saturday, and cool overnight. Then we freeze all the quiche and use them throughout the week. To serve it we take it from the freezer from the night before let it thaw out and cut it into 5 pieces. Each piece gets put on a plate and microwaved it for 1 minute and 45 seconds when it ordered. If we have to take it directly from the freezer cut the quiche and then each piece gets microwaved for 3 minutes. After you microwave the pieces of quiche take a paper towel and wipe off the excess moisture on the plate to prevent the crust from getting soggy. Our quiches are all different kinds and this method works for all of them. No one ever knows that they were frozen. Hope this helps. Sorry its so long.

You can freeze quiche, it's easy. What i would do is make sure the crust is extra crunchy when you make the quiche. If you are pre baking the crust bake it a little longer than normal to get it really crunchy. Then when it is cool, wrap it really good and freeze. And to reheat it just set the oven temp pretty low like, 250F and then let it warm up for about 30 to 45 min, depending on the thickness. Good luck and happy eating

No let it cool then wrap it in tinfoil and let it sit in the freezer i'm an expert it will not get soggy! Merry Christmas
