I am making veggie cold pizza as am appetizer on CHristmas Afternoon...how early can i chop the Brocc..caluiflower...bell peppers? They are being chopped into little pieces.

Can i put them in a ziplock? poke holes in the bag?

can i even do it yet?

When you ask how early you "can" chop them, it's a different answer then how early you "should" chop them. You "could" chop them a few days ahead of time and place them in a bowl with plastic wrap. However, you "shouldn't" chop them any more than day ahead if you are concerned about minimal flavor loss.

At restaurants they keep chopped vegetables in ice water in the fridge. You will lose some flavour, but if prep-time of your pizza is of concern, this is the way to prepare ahead of time.

You should probably cut them like that day or the day before would be good!
