Do broccoli gratin
Fresh broccoli
1c cream
2 cups mozzarella cheese
1/4c Parmesan cheese
pour cream over broccoli in a casserole dish
mix well
add mozzarella cheese
mix well again
sprinkle Parmesan on top for a "crust"
bake at about 400 degrees for 30mins till top is golden & cheese is melted.

Here's one that always gets rave reviews even from the broccoli haters:
2 pounds fresh broccoli, trimmed and cut up
2 tablespoons unsalted butter, plus more for greasing the casserole
1/4 cup chopped celery
1/4 pound fresh mushrooms, sliced
1/4 cup chopped onion
1 (8-ounce) can sliced water chestnuts
1 (10 3/4-ounce) can condensed cream of mushroom soup
1/2 pound cheese product, softened (Like Velveeta or CheezWhiz)
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup grated Cheddar
Preheat the oven to 350 degrees F. Butter a 9 by 13-inch casserole.
Steam the broccoli until tender, about 10 minutes. In the meantime, melt the butter in a medium skillet over medium heat and saute the celery, mushrooms, and onion until softened, about 10 minutes; drain. Combine the broccoli and the cooked vegetables in a bowl.
Heat the soup and softened cheese product in a saucepan over low heat until the cheese melts. Pour it over the broccoli mixture. Add the garlic salt and pepper and combine.
Put it into the buttered casserole dish and bake for 20 to 25 minutes. Sprinkle the top with the grated Cheddar the last 5 minutes of baking
You can bake it and take it and add the cheese (as I'm assuming the oven will be on anyway, due to a holiday dinner, and all you need is 5 minutes to melt the cheese...........Enjoy the holiday!!!!

Broccoli Casserole
1 1/2 cups hot water
1 pkg (6oz) Stove Top Stuffing for Turkey
3 tbsp Butter
1 pkg frozen broccoli, thawed
1 can (10 3/4oz) condensed cheddar cheese soup
3/4 cup milk
Preheat oven 350 degrees. Mix hot water and butter in large bowl til butter is melted. Add stuffing mix; stir just until moistened. Set aside.
Put broccoli in a 2qt. casserole dish or 9x13 baking pan. Mix soup and milk until well blended; pour over broccoli. Top with stuffing. Bake for 30 mins or until heated through. Make 6 servings.

Broccoli casserole: 2 packages chopped broccoli
1 can of cream of chicken soup
1 cup each of onion and celery
1 cup of cheese-whiz
1 cup of cooked rice
You can cook your own rice or get some instant rice.
Grease or spray casserole dish. Cook broccoli for 5-10 minutes.
Saute onions and celery in a little butter until nearly soft. If you want a little crunch cook these less. mix all ingredients together and pour in your casserole dish.
Bake at 350 for about 45 min to 1 hr or until it is bubbling.
You can make this your own recipe by using mushroom soup or adding more or less of an ingredient.
Vegetable casserole: 1 can of small peas
1 can of asperagus
1 can of water chestnuts
1 small can of mushrooms
1 can of mushroom soup
8 oz of cheese--cheddar or other
croutons
Grease or spray your casserole dish. Layer the ingredients--peas, asperagus, mushrooms, water chestnuts, soup, cheese and last croutons.
Bake for about 45 min to 1 hr or until croutons are brown.
Hint: drain vegetables but not to much. The peas and asperagus are very nice together but you could use other veggies if you want.

Fairly easy- very tasty and special.
Honey Cashew Green Beans
1/2 pound fresh green beans, trimmed
2 tablespoons coarsely chopped cashews
4 1/2 teaspoons butter or margarine
1 tablespoon honey
Place beans in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam for 8-10 minutes or until crisp tender. Meanwhile, in a small skillet, saute cashews in butter for about 2 minutes or until golden brown. Stir in honey; heat through. Transfer beans to a serving bowl; toss to coat. Serve immediately.

Broccoli/Veggie Dish
INGREDIENTS:
3/4 cup mayonnaise or vegan mayonnaise
1/4 cup red wine vinegar
2 tbsp sugar
approx 2 cups broccoli, chopped
1 cup cashews
1 cup raisins
salt and pepper, to taste
PREPARATION:
In a small bowl, mix together the mayonnaise, vinegar and sugar and set aside (this is your dressing).
In a separate large bowl, combine the broccoli, raisins and cashews.
Pour the dressing over the broccoli. Add a sprinkle of salt and pepper, to taste.

Get a bag of frozen Green Beans or fresh beans with the ends snapped. Heat a pan with a small amount of olive oil. Saute the green beans with salt and pepper. When they are cooked but not limp, add almonds and saute for 1 minute longer.

TOMATO & ZUCCHINI GRATIN
3 lbs. tomatoes
3 lbs zucchini
Half cup breadcrumbs
Quarter cup grated Parmesan or Romano cheese
2 tablespoons parsley, chopped
1 tablespoon thyme, chopped
1 tablespoon oregano, chopped
Olive oil, as needed
Salt and pepper to taste
Slice the tomatoes and zucchini into quarter inch slices. Overlap them on an oiled sheet tray. Mix all of the remaining ingredients except the oil and sprinkle over the vegetables. Drizzle with olive oil and then bake at 375 degrees for 20 minutes.

Broccoli/cauliflower salad:
Chop broccoli and cauliflower into bite sized pieces. About 6 cups.
Add raisins, chopped celery or crisp apples, chopped nuts or sunflower seed kernels.
Dressing: 1 cup mayonaise, 1/4 cup sugar, and 3 tablespoons vinegar. Mix and pour over salad, refrigerate. Stir just before serving.
