Part of it may depend on everyones ages, however there are tons of great things to check out and do:
If the weather is nice: Visit Central Park and walk through a few great neighborhoods (Soho, The Village, Midtown, Upper West Side). Go skating at Wollman Rink in Central Park (Rockefeller is nice, but CRAZY crowded).
Any museum would be incredible depending on the style of art you like: Museum of Natural History, Metropolitan, MOMA, Guggenheim, Museum of the City of NY.
Great places for dinner that are NOT tourist traps:
Xing (incredible contemporary Asian cuisine, 9th Ave @52nd St)
Basilica (awesome Italian food, 9th Ave @47th St.)
Island Burgers & Shakes (best Burger in town, 9th Ave @ 51st)
Spoonbread Too (killer soul food, 110th & Morningside Park)
If you want a tourist trap:
Jeckyll & Hyde Club (6th Ave @57th St)
Juniors (Broadway & 49th?)
enjoy!

Maybe the Natural History Museum, Central Park Zoo and carousel, if open. At night the Rockette's Christmas Spectacular at Radio City. Try Carnegie Deli at Times Square, also, lots to do and see at Times Square. Top of the Rock at Rockefeller Center is great, better that Empire State. You can see the harbor on the Satton Island ferry which is free, of take a Statue of Liberty tour boat. All the above would entertain both adults and kids.
