Stay away from things that crumble like crackers. Those are the things that tend to be the messiest :-) Try these:
-Sliced cheese
-Sliced bananas
-Carrot sticks
-Tiny peanut butter & jelly sandwhiches (make a whole sandwhich and cut it into strips)
-Sliced cucumbers
-Tiny broccoli heads
-Raisins
-Tiny marshmallows
-Dry cereal
-Pretzel sticks
-Granola (I think you can buy small bags of granola)
-Corn pops (they're white, fluffy things you can find on the "chip aisle"..they're very low fat, low sodium, etc. and are fun to snack on)

We take our 2 year old son on many long driving trips. I like to give him small cans of pringles. It's not very messy and he is entertained by the lid. Make sure you have plenty of juice. And we have a portable DVD player that helps, and we take lots of books, coloring books, and wooden puzzles. I also give him goldfish crackers, and candies that he can eat one at a time to keep him occupied longer like m&ms, and skittles. I hope that helps, and have a safe trip!

boxes of different types of crackers like Cheeze-its, Ritz, and Graham sticks, raisins, dried fruits, fruit snacks, chex mix, you can pack a small cooler with string cheese, yogurts, grapes, apple slices, carrot sticks, and juice boxes. You may want to go easy on the sugary stuff while being confined to a vehicle for 12 hours, though. It will come back to haunt you.

My daughter really like the Gerber veggie crackers. They were quick, easy, and somewhat healthy. They are not exactly bite size, each cracker is about two bites for a child, but I always had some on hand.

depends on your idea of a mess,if you do not want sticky and she has the teeth needed for these snacks then here are a few things we take on the road with us
Cheerios and raisins/any dry cereal
apple slices
carrot sticks
granola bars
all of these can be made ahead of time and do not require a cooler.

Take walkman with music or fairy-tales,take anything for eating - chips,crisps, take some little presents and give her every one hour,let her slep in the car,play "guess" - "How is the cow's child called?" or "Show me a red car,now show me a car behind us,show me a lorry"...etc.

thin carrot sticks, pieces of banana, graham crackers for example. You really don't want to give her cookies while traveling because her energy level will be off the car wall.
