Quick and tasty spanish rice that is adaptable to your family

Ingredients
1 cup Uncooked rice
3 tbs. Vegetable oil
2/3 cup Diced onion
1 8-oz Can of corn drained
1/2 can Of "ro-tell" (optional)
1 tsp. Cumin
1 tsp. Chili Powder
2 tsp. Salt (optional)
1 tsp Garlic Salt
1/8 tsp. Saffron Powder
2 - 3 tbs. Water or chicken broth

Preparation
Cook rice as directed on package.

Meanwhile, heat vegetable oil in large, deep skillet. Add onions and saute until clear. Add can of corn, "ro-tell", cooked rice and spices. Add water or broth one tablespoon at a time stirring after each addition until the rice is mixed through and yellow. Serve warm.

Cook's Notes
The "ro-tell" was my mother's idea, but my family does not like it so I usually don't include it. You can add whatever vegetables you want to this rice or even add diced chicken. This makes a lot and I usually freeze the left overs reheating them with 1/4 Cup water in a covered pot until the rice is tender.

Pick yourself up a bag of Vigo yellow rice (family size) and 1 large onion, 1 large green pepper, 1 red pepper, 2 medium sized garlic cloves, olive oil and some chicken broth. 1.) Dice onions and peppers, finely chop the garlic. 2.) Add olive oil to pan according to package. 3.) Add onions, garlic, peppers to pan on low heat, once the mixture begins to simmer, let it do so for 5 minutes. 4.) Instead of adding water as per instructions, use chicken broth instead. 5.) Bring the broth to a boil then add rice, boil for 1 minute then reduce heat to low. Cover and let cook for 25mins So , pretty much just follow the package instructions but add garlic, peppers, onions and chicken broth. (NO WATER) The rice tastes really good and ever better the next day. Try it and let me know how it turns out.

You have to use saffron as the primary choice and Tumeric (in the absence of saffron) as the secondary choice. These items color the rice yellow.
