This recipe is organic. It can be converted for those who don't need to have organic foods.
1 package (10 oz) frozen organic corn, thawed
1/3 cup organic cane sugar, more or less to taste
1 tsp sea salt, or to taste
freshly ground black pepper, to taste
2 TB corn meal or corn flour
2 TB unbleached organic white flour
1/4 tsp baking powder
4 TB melted butter
4 organic eggs
1 cup organic low fat milk
1 cup shredded sharp cheddar cheese (reduced fat cheddar is fine)
paprika (optional)
Preheat oven to 375°F.

Spray a 7x11-inch glass baking dish with canola or olive oil spray. Set aside. Mix all ingredients except paprika together in a large bowl. Pour batter into prepared baking dish. Sprinkle with paprika if desired.

Bake for 45 to 50 minutes or until set. Pudding is done when a knife inserted in the center comes out clean.
