Lots of different ways. None really requires a recipe.
I use two large cans of yams (drained)
Coarsley mash them in a bowl. Add about 3/4 C brown sugar and 1/2 stick butter or margarine. mix together.
If you like you can add a can of drained mandarin oranges, or pineapple (both drained).
I also like to add pecan pieces.
Add a dash or two of cinnamon & nutmeg.
Transfer to a greased baking dish. (top with marshmallows, optional)
Bake in a 350F oven for 30-35 minutes.
Marshmallows will be browned when done.

3 pounds of sweet potatoes peeled and cooked.
3 eggs

1 stick of margarine
1/2 tsp vanilla
Topping:
1 cup of light brown sugar
1/3 cup of flour
1/3 cup melted butter

boil or bake pototes, Peel potatoes after baking if you bake them! I find that they are a brighter color if you bake them. Whip with milk, add eggs, sugar, margarine and vanilla. Mix. Pour into a buttered casserole.
Mix together topping ingredients. Spoon on top of potatoes.
Bake 35 minutes or until center is set at 350 degrees.
Do not substitute margarine for butter for the topping.
Happy Holidays. Enjoy !
