Scalloped potatoes or mashed potatoes made with sour cream instead of milk or cream, sweet potatoes too, though for me, that's too many major carbs if you have regular potatoes as well, so for a little color, glazed carrots are nice and the sweet mixes good with the salty of the ham. (FYI - Buy a little bag of those already cleaned and peeled carrots, pop them in the microwave with brown sugar and butter. FAB!!) You could also do some cornbread muffins on the side. Cranberry sauce, or a nice cherry salsa for the ham will also liven it up. Hope this helps! Good luck!!

Kids or no kids?? My kids love Southern Living's baked Mac and Cheese. Interested I'll send the recipe. Looking for something fancy I'm sure there are plenty of ideas coming your way. Cheesy potato casseroles (AuGratin, Hash Brown Casserole etc.) are always good with ham.

Escalloped potatoes in a cheddar sauce is nice. Or make a rice and green bean casserole. Don't forget dinner rolls and whipped butter. Serve a tossed salad first and follow up the main courses with mince pie or apple pie, or maybe apricot cobbler. Serve whichever pie you prefer hot with a scoop of French vanilla ice cream on top. After everyone's let their dinner settle, serve hot amaretto coffee for the final touch.

Sweet Potatoe Casserole

3 pounds of sweet potatoes peeled and cooked.
3 eggs
1/2 cup milk
1 stick of margarine
1/2 tsp vanilla

Topping:
1 cup of light brown sugar
1/3 cup of flour
1/3 cup melted butter
1 cup of chopped pecans

boil or bake pototes, Peel potatoes after baking if you bake them! I find that they are a brighter color if you bake them. Whip with milk, add eggs, sugar, margarine and vanilla. Mix. Pour into a buttered casserole.

Mix together topping ingredients. Spoon on top of potatoes.

Bake 35 minutes or until center is set at 350 degrees.


Do not substitute margarine for butter for the topping.

I have a great recipe for "Cheezy Potatoes". Its firm-set mashed potatoes with sour cream, chopped carmelized onions, sour cream, and spices. Delicious! If u want the recipe let me know...

loaded mashed potatoes (w/cheese, sour cream, bacon bits, minced onion, 1 minced garlic clove, lots of butter, ranch or 1000 island creamy dressing, use your imagination
