Carmel is usually a place name while caramel is a tannish-brown sugary sweet food made as a result of the caramelization of sugar.

Nimrods call caramel "carmel" just because they've got the pronunciation all fricacked up and are borderline clueless.

The correct pronunciation is caramel but Kraft called their little caramel squares "carmels". People used Kraft's name in place of anything with a caramel flavor.

If you are referring to the candy, no difference at all, except pronunciation. They both refer to the same thing. It is a case of 'I say tomato, you say tomato'.

However, Carmel is a name of a several cities and companies. Google returns about 20 million hits on that spelling.

There is no difference. Caramel is the proper spelling/pronunciation. When I lived in the Northwest, I noticed that they said carmel a lot and it made me think they were all just a bunch of nimrods but then I got over it. Lol. It's caramel.
